Winter Fruit Almond Cobbler
Description
The unique use of crispy almonds and arrowroot makes this versatile cobbler recipe a winner. Zesty and wholesome, it adapts beautifully to many different seasonal fruit. Apples, stone fruit, berries – make it your own!
Ingredients
6 cup
Seasonal fruit ((tart apples, plums, peaches, blueberries, persimmons)) 1 tbsp
Arrowroot powder 2 tbsp
Sucanat (or organic sugar) 1⁄2 tsp
cinnamon 3⁄4 cup
toasted almonds 3⁄4 cup
arrowroot 6 tbsp
butter, softened 1⁄4 cup
sucanat 1⁄4 tsp
sea salt 1 tsp
vanilla extractInstructions
Peel and core fruit and cut into slices. Toss with lemon juice. Mix Sucanat, lemon rind, arrowroot and cinnamon together and toss with the fruit. Place in a buttered baking or soufflé dish. Place almonds in a food processor and process to a powder. Add butter, arrowroot, Sucanat, vanilla and salt and process until smooth. Crumble this mixture on top of the apples. Bake at 350 degrees for 1 hour. Serve with whipped cream.
