Sweet and Sour Beets


The vibrant purple color of beets indicates their rich nutrient profile. Roasting them brings out their natural sweetness and makes for a simple, satisfying side dish.

This recipe comes from Bastyr dietetic intern and certified nutritionist Siona Sammartino, MS, CN.


medium beets, scrubbed and diced
1 tbsp
extra-virgin olive oil
1⁄2 tsp
sea salt, plus more to taste
1⁄4 tsp
fresh cracked pepper
2 tsp
grade B maple syrup or honey
4 tsp
balsamic vinegar
1 tbsp
chopped fresh basil or flat-leaf Italian parsley


Preheat oven to 400 degrees Fahrenheit. Place beets in a large baking dish. Toss with oil, salt and pepper and press beets in a single layer. 

Roast for about 45 minutes, flipping halfway through until beets are slightly browned on the outside and tender in the middle. Remove from oven, toss with maple syrup, vinegar and herbs and serve.
