Sweet and Sour Beets
The vibrant purple color of beets indicates their rich nutrient profile. Roasting them brings out their natural sweetness and makes for a simple, satisfying side dish.

3medium beets, scrubbed and diced
1 tbspextra-virgin olive oil
1⁄2 tspsea salt, plus more to taste
1⁄4 tspfresh cracked pepper
2 tspgrade B maple syrup or honey
4 tspbalsamic vinegar
1 tbspchopped fresh basil or flat-leaf Italian parsley
Preheat oven to 400 degrees Fahrenheit. Place beets in a large baking dish. Toss with oil, salt and pepper and press beets in a single layer.
Roast for about 45 minutes, flipping halfway through until beets are slightly browned on the outside and tender in the middle. Remove from oven, toss with maple syrup, vinegar and herbs and serve.
