Spirulina Energy Bites

Description

Spirulina is a greate source of B vitamins and essential fatty acids! Protein, healthy fats, and fiber make these sweet little bites the perfect energizing snack.

Ingredients

1 cup
pitted dates
1 1⁄4 cup
raw walnuts
1 1⁄2 tsp
spirulina
1 tsp
salt (or to taste)
1 tsp
cardamom or cinnamon (optional)
1⁄2 cup
unsweetened coconut (to coat)

Instructions

Put the dates, walnuts, spirulina, cardamom (optional), and salt into a food processor and process at full speed until a stiff paste forms. 

Sprinkle the coconut shreds on a plate and have another clean plate handy. Break off thumb-sized pieces of the paste, roll into balls, then roll in the shredded coconut. Place the final product in the refrigerator for several hours. This will firm them up and give them a fantastic texture. Eat one when you need a quick boost of energy!

Keep in the refrigerator in a sealed container for up to 1 week, freeze for up to 2 weeks.
