Spinach and Basil Pizza with Cauliflower Crust

Who doesn’t love pizza? Your body will love it, too, when you sneak vitamin-rich cauliflower into the crust! Your friends will be amazed at your creativity, and pleased to know that cauliflower also contains cancer-fighting properties.

Ingredients

1⁄2 medium
cauliflower
2 large
eggs
1⁄2 cup
Parmesan cheese, finely grated
1⁄4 cup
coconut flour
1 tsp
dried oregano
1 tsp
dried garlic
1⁄2 tsp
onion powder
1⁄2 tsp
salt
1⁄2 tsp
pepper
1⁄2 cup
tomato sauce
1⁄2 cup
spinach
1⁄4 cup
basil, julienned
1⁄2 cup
mozzarella cheese, shredded

Instructions

Shred the cauliflower with a box grater or in a food processor until you have about 2 cups. Steam for 6-8 minutes, then place cauliflower in a clean dishrag or cheesecloth and squeeze out excess water. 

Place "dry" cauliflower in bowl and immediately add eggs, Parmesan cheese, flour, dried spices, and salt and pepper. Stir until cheese is melted and all ingredients are well-combined.

Line a pizza tray with parchment paper sprayed with olive or coconut oil spray. Spread mixture on tray evenly in the form of a pizza circle.

Bake crust in oven preheated to 375-400 degrees Fahrenheit until lightly golden brown, about 20-25 minutes. Top pizza in the following order: tomato sauce, spinach, basil and mozzarella cheese.

Broil pizza for 5-7 minutes or until cheese is melted and slightly browned.
