Shaved Brussel Sprout Salad with Pumpkin Spice Vinaigrette

Description

Craving a sweet pumpkin spice treat? Here's a light and nutritious shaved brussel sprout salad with pumpkin spice vinaigrette to curb your fall cravings. 

Ingredients

1⁄4 cup
virgin olive oil
1⁄8 cup
balsamic vinegar
2 tsp
Dijon mustard
2 tsp
honey
1 tbsp
fresh tarragon (chopped)
1 clove
garlic (finely minced)
1⁄4 tsp
cinnamon (ground)
1⁄8 tsp
ginger (ground)
1⁄8 tsp
nutmeg (ground)
1⁄2 tsp
salt
1⁄4 tsp
black pepper (freshly ground)
   
For salad
1 lb
fresh brussels sprouds (shaved *cut into very thin slices*)
4 cup
arugula
1⁄2 cup
pumpkin seeds (toasted)

Instructions

Combine all ingredients for dressing in a bowl and whisk until emulsified. Keep refrigerated until ready to use.

Add all ingredients for salad to a large bowl and drizzle with the dressing.
