Savory Pear Green Salad

Description

If you're looking for a burst of delicious nutrition from a fruit that's grown locally in the Puget Sound area, look no farther than your nearest pear tree. High in vitamin C and potassium, one medium pear also contain 5 grams of fiber and carries a low glycemic load. Enjoy our local fruit in this sweet and savory salad that from Bastyr University nutrition student Elizabeth Diehl. She notes that the recipe makes more than enough dressing, allowing you to repeat this salad easily. 

Ingredients

3 tbsp
lemon juice
1 tbsp
honey
1 clove
garlic, pressed
  to taste
salt and pepper
1⁄4 cup
extra virgin olive oil
4 cup
baby lettuce or romaine
1 medium
pear, cored and thinly sliced
1⁄4 cup
pepitas (see Additional Notes below)
1⁄2 cup
crumbled feta cheese

Instructions

Combine lemon juice, honey, garlic, salt and pepper in a bowl. Whisk in oil a few drops at a time to emulsify. Alternatively, shake ingredients together in a tightly sealed jar. Set aside.

Wash and spin-dry the lettuce and place in a large salad bowl. Arrange pear slices on top.  Sprinkle with pepitas and crumbled feta. Add a few tablespoons of the dressing, and very gently toss. Taste, and add more dressing if necessary.

Notes

Pepitas are the tender green kernel inside a pumpkin seed. Hulled pepitas can be found in the bulk foods section of grocery stores, near other seeds and nuts.
