Kale Chips

Not many people think of calcium when they look at their veggies, but kale (and other dark leafy greens) is an excellent source of calcium! These kale chips, which also are high in iron, are a tasty way to get a picky eater to eat their greens. In fact, they may not want to stop!

1 bunch
kale (any variety)
1 tbsp
olive oil
1 dash
kosher salt
1 dash
black pepper, freshly ground

Preheat the oven to 350 degrees Fahrenheit. Rinse kale and dry very well. Remove kale stems and tear into bite-sized pieces. Toss kale pieces in a bowl with olive oil.

Spread out on a baking sheet and sprinkle with salt and pepper. Bake for 15 minutes, or until crisp. Place baking sheet on a rack to cool.

Other possible toppings: shredded Parmesan cheese, sprinkle of nutritional yeast, pinch of cayenne pepper and squeeze of lime juice, sprinkle with tamari ... endless possibilities!
