Cilantro Jalapeno Hummus

Description

Instead of getting stuck in a rut when trying to come up with ideas about what to take to that next summer potluck, try making something that is fresh, tasty and easy to prepare, such as a simple hummus. This hummus recipe is a new twist on an old favorite, and is great to spread on crackers or is terrific as a dip for your favorite vegetables. Made from fiber-rich garbanzo beans, garlic and heart-healthy olive oil, hummus packs a nutritional punch. This recipe is courtesy of Dawn Jae, a student in the Master of Science in Nutrition program.

 

Ingredients

2 can
garbanzo beans, rinsed and drained
1  
lime, juiced
2 clove
garlic, minced
2 tsp
jalapeno pepper, deseeded and finely minced
1⁄2 cup
cilantro, finely chopped
1⁄4 cup
extra virgin olive oil
2 tbsp
water (or more, for desired consistency)
1⁄4 tsp
salt, to taste
1⁄2 tsp
fresh ground pepper, to taste

Instructions

Place garbanzo beans, lime juice, garlic, jalapeno, cilantro, olive oil and water in blender or food processor. Pulse, then blend until desired consistency. Stir to ensure it's well-mixed, then add more water until desired consistency. Add salt and pepper to taste and garnish with a sprig of cilantro. Serve with favorite veggies, such as carrots sticks, turnips, radishes, cucumber or bell peppers.
