1⁄4 cupMinute Tapioca or Cornstarch*
1 tbsplemon juice
1 pkgpie crust
Mix berries with sugar, tapioca, lemon juice, and cinnamon.
Let stand for at least 15 minutes.
Divide pie dough into 1 lb pieces.
Line 10" pie plates with pastry.
Fill with fruit mixture.
Dot top of fruit with butter pats.
Egg wash edge of pastry.
Cover with top crust (do not egg wash crimped edge.)
Dust top with sugar
Bake at 400 for 30 minutes.
Lower heat to 350 and continue baking until fruit is bubbling in the center (about 30 minutes)
*amount of thickener may vary depending on the berry used.
Blueberries will require about 1/4 less than blackberries or raspberries.
