"Beet" the Blues Brownie Bites

Description

Who knew it was so easy turn a beet into a mood-boosting dessert? These moist and flavorful brownies from Bastyr University dietetic intern Ellie Freeman (MSN/DPD '13) pair beets with flax seeds, eggs and cocoa powder in such a way that no one would ever know that the secret ingredient is a bright red beet!

Ingredients

4 large
pastured eggs
1⁄3 cup
unsalted pastured butter, melted (or coconut oil)
1 tsp
vanilla extract (preferably homemade)
3⁄4 cup
maple syrup
1 1⁄2 cup
cooked beet puree (about 4 small beets)
2 tbsp
2 tablespoon raw cream (or coconut cream)
1⁄4 cup
coconut flour
1⁄4 cup
flax meal
1⁄2 cup
raw cocoa powder
1⁄2 tsp
sea salt
1⁄2 tsp
baking soda
1⁄2 cup
raw cocoa nibs or chocolate chips

Instructions

Preheat oven 350 F. In a stand-up mixer or hand mixer combine first 6 ingredients in the order listed. In a separate bowl combine dry ingredients. Combine wet and dry ingredients and mix well. Grease an 8-inch-by-8-inch pan and pour batter into the pan. Bake for 35-40 minutes or until toothpick comes out clean.
