Gingered Lentil Sandwich Spread


Smear this gingered lentil sandwhich spread on whole-wheat bread and greens for a protein-rich lunch, enlivened by anti-inflammatory ginger. Or try it as a hummus appetizer served with cut-up veggies, pita traingles and other dippers.

Gingered Lentil Sandwich Spread


2 cup
cooked lentils
2 tbsp
extra-virgin olive oil
2 tsp
grated ginger
1 tbsp
whole grain mustard
mushrooms, sliced
1⁄2 tsp
sea salt
1⁄4 cup


Put cooked lentils and all other ingredients in food processor or blender; blend until smooth. If using a blender, blend ¬ľ of the mixture, then add the rest a little at a time. Will keep in the refrigerator for several days.
