Watermelon Cucumber Salad Ingredients: 2 cup watermelon chopped in 1/2-inch cubes 1 small cucumber, peeled and chopped in 1/2-inch cubes 4 basil leaves 1/2 lemon zest Instructions: Place the watermelon and cucumber in a serving bowl and gently mix together. Finely chop the basil leaves, and add to the mix. Add zest from half of a lemon, then give the salad a final light toss. Enjoy in the shade.
