Copyright 2016 Serving Size : 2 Preparation Time :0:15 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 cup sugar 1 cup water 1 small honeydew melon -- peeled, seeded and cut into 1- to 2-inch cubes 1/3 cup mint, lightly chopped 1/2 cup lime juice 2 tbsp lime zest 2 tbsp champagne vinegar In a 2-quart saucepan bring the sugar and water to a boil, then turn heat down to allow this mixture to simmer for 3-5 minutes. Set aside and allow to cool for 10-15 minutes. Place the melon, mint and lime juice in a blender and blend thoroughly. For a silky texture, strain through a fine mesh strainer, then add 2 tablespoons of lime zest and vinegar to the strained juice. Combine the simple syrup and the juice.
