Pina's Coconut Pancakes

Description

This update on a classic pancake recipe features coconut oil, a heart-healthy oil with many benefits: lowering cholesterol, boosting immunity, improving hormone and insulin control, and providing health fats.

This recipe comes from alumna Pina LoGiudice, ND ('03), MSA ('03), LAc, who appears on the Dr. Oz Show and Katie Couric's show to talk about the benefits of coconut oil and other natural treatments. Read an interview with Dr. LoGiudice.

Ingredients

1 cup
whole-wheat pancake mix
1  
egg
1 tbsp
coconut oil
1⁄2 cup
milk
1 tsp
vanilla extract
1 tsp
cinnamon
1 tsp
cardamon
1 tbsp
flaxseed
1⁄4 cup
walnuts
1 tbsp
shredded coconut

Instructions

  1. Combine pancake mix, egg, coconut oil, milk, vanilla, and spices. Mix until well blended. Add flaxseed and walnuts.
  2. Pour batter onto greased griddle or skillet. Cook pancakes as you normally would.
  3. Garnish with shredded coconut.
